About This Opportunity
Join the culinary team at Patina at Customs House, a modern restaurant that embraces a paddock-to-plate philosophy, offering a unique shared dining experience with stunning Brisbane River views. Located within one of Brisbane’s most iconic heritage venues, the kitchen also caters to exclusive private events both on and offsite.
Key responsibilities will include:
Prepare high-quality food for the restaurant, in-house events, and offsite catering.
Maintain food safety, hygiene, and kitchen cleanliness standards.
Assist in training and supervising kitchen hands.
Monitor stock levels, receive goods, and ensure proper storage and rotation.
Adhere to recipes and maintain mise en place for restaurant and functions.
Record and monitor food storage temperatures and report equipment issues.

About You
Completion of apprenticeship in cookery.
Current BCC Food Safety Supervisor Certificate.
Strong knowledge of the production of a la carte and banquet foods
Good knowledge of all kitchen procedures and operations
A genuine interest in and knowledge of food and current trends
Excellent organisational skills
Well-developed communication and interpersonal skills
Knowledge of workplace, health and safety procedures in a kitchen
Knowledge of HACCP and BCC procedures in regard to food, health and safety procedures
Minimum of 2 years experience in the role of commis chef chef in a similar establishment.
A positive attitude and customer driven focus
High standard of personal cleanliness
A commitment to excellence of product and service
Valid Driving License
The successful candidate may be required to complete a number of pre-employment checks, including: right to work in Australia and education check.
